Sifo’s Juicy Braai Greek-Inspired Lamb Chops

Sifo’s take on juicy Greek-inspired lamb chops marinated in garlic, herbs, and lemon, then grilled over hot coals to perfection. This recipe will definitely wow your guest and makes you the ultimate braai master.

Ingredients
  

  • 800-900 g rack of lamb sliced into chops
  • 80 ml olive oil extra virgin
  • 2 tsp dry oregano
  • 5 garlic cloves grated or finely chopped
  • 10 g fresh mint leaves roughly chopped
  • 3-4 sprigs fresh rosemary roughly chopped
  • 1 lemon juiced
  • Salt and pepper to taste

Method
 

  1. Slice the rack of lamb, slice into individual chops, cutting between the bones so each piece is even in thickness for consistent grilling.
  2. In a large bowl or casserole dish, mix together olive oil, dry oregano, garlic, mint leaves, rosemary, lemon juice, salt and pepper until well combined.
  3. Add the lamb chops to the marinade, tossing to coat every piece thoroughly. Cover andlet marinate for at least 60 minutes.
  4. Grill the marinated lamb chops over hot coals, turning occasionally, until charred on the outside and cooked to your liking (5-6 minutes for juicy medium rare or longer if you prefer well-done).
  5. Let the chops rest for 5 minutes before serving. Serve with your favourite side.
  6. For extra flavour, throw the used rosemary sprigs onto the coals while grilling for a fragrant
    smoke. Rest the chops for a few minutes before serving, to allow the juices to redistribute. Great with a squeeze of fresh lemon and/or a side of tzatziki.
