Stuffed Pork Fillet

Lean pork fillet stuffed with apricots and sage, wrapped in bacon for a flavorful roast.

Ingredients
  

  • 2 pork fillets tenderloins, trimmed
  • 6-8 dried apricots finely chopped
  • 2 tbsp breadcrumbs
  • 4 fresh sage leaves chopped
  • 8-10 slices streaky bacon
  • Salt and pepper
  • Olive oil

Equipment

  • Sharp knife
  • Kitchen twine
  • Roasting pan

Method
 

  1. Preheat oven to 200°C (400°F). Make a deep lengthwise cut down each fillet to create a pocket.
  2. Mix apricots, breadcrumbs, and sage. Stuff mixture into the pork pockets. Season the outside.
  3. Wrap bacon slices around each fillet, securing with twine at intervals.
  4. Sear in a hot, oiled pan until bacon is golden. Transfer to a roasting pan.
  5. Roast for 15-20 minutes until pork is just cooked through. Rest for 10 minutes before slicing.

Notes

The apricots add a sweet contrast to the savory bacon and pork. Serve with apple sauce.
