- Preheat oven to 200°C (400°F). Make a deep lengthwise cut down each fillet to create a pocket.
- Mix apricots, breadcrumbs, and sage. Stuff mixture into the pork pockets. Season the outside.
- Wrap bacon slices around each fillet, securing with twine at intervals.
- Sear in a hot, oiled pan until bacon is golden. Transfer to a roasting pan.
- Roast for 15-20 minutes until pork is just cooked through. Rest for 10 minutes before slicing.
Notes
The apricots add a sweet contrast to the savory bacon and pork. Serve with apple sauce.
