Salmon Pasta (Creamy)

Flaky pan-seared salmon tossed through a creamy lemon-dill pasta.

Ingredients
  

  • 400 g pasta tagliatelle or fettuccine
  • 2 salmon fillets skin-on
  • 1 cup heavy cream or crème fraîche
  • Zest and juice of 1 lemon
  • 2 tbsp fresh dill chopped
  • 1 small onion finely chopped
  • 2 tbsp olive oil
  • Salt and pepper

Equipment

  • Large pot for pasta
  • Large frying pan
  • Grater/zester

Method
 

  1. Cook pasta in salted water according to package instructions. Reserve 1 cup of pasta water before draining.
  2. Season salmon. Heat oil in a pan, skin-side down first. Cook for 4-5 mins per side until crisp and cooked. Remove, flake into chunks.
  3. In the same pan, sauté onion until soft. Add cream, lemon zest, and juice. Simmer for 3-4 minutes.
  4. Add drained pasta, flaked salmon, and dill to the sauce. Toss to combine, adding reserved pasta water if needed to loosen the sauce. Season and serve.

Notes

Capers make a great addition for a briny kick. Cook salmon skin-side down first for perfect crispness.
